Honey Mustard Salad Dressing

I bought a huge amount of greens from Costco the other day and quickly tired of the dressing we had in our fridge. I searched the web for an easy home made dressing and found this on It is seriously delish! I find myself eating huge amounts of salad just as an excuse to load up on the dressing.

3/4 cup mayonnaise
2 tablespoons sugar
2 tablespoons honey
1 tablespoon prepared mustard
1 tablespoon vinegar
1 tablespoon chopped onion
1/4 cup vegetable oil
1 tablespoon minced fresh parsley

In a blender or food processor, combine the first six ingredients. Slowly add oil; process until smooth. Stir in parsley. Cover and chill for at least 1 hour. Can be refrigerated for up to 1 week.
